1 Cup uncooked Tri Colored Orzo - Cooked per package instructions and cooled
2 Medium Chicken breasts, pounded to 1/2" Thickness
4 Tbsp Chipotle BBQ Seasoning Divided
1 Cup non-sulfited Diced Mango - rehydrated
1 1/2 Cup Jicama Diced
1/2 Cup Diced Green Anaheim Chili - Rehydrated
4 Scallion Chopped
1/2 Cup Chopped Cilantro
5 Tbsp Safflower Oil
4 Tbsp Fresh Lime Juice
2 Tsp Agave Nectar
Salt and Pepper to taste

Dredge Chicken in 3 1/2 Tbsp Chip BBQ Seasoning. Sear and cool. Blend all ingredients, including remaining 1/2 Tbsp Chip BBQ and season to taste with salt and pepper.
